Loaf cakes are thicker than those baked in normal cake tins, so will take longer to cook. How would the quantities change from the usual rich fruit cake recipe, and also the cooking time?

Line a loaf tin with a loaf liner. You will need a loaf tin, mine measures 30cm x 12 cm, and 8cm deep. If you're making and decorating a christmas cake for the first time or wanting a new twist on the classic mix of spices, dried fruits, nuts and booze, then look no further. This mixture can be divided between two 900g/2lb lined loaf tins or two 15cms/6 round cake tins or a combination of both and will bake in about 1½ hours at the same temperature.
